What's Our Approach Towards Sustainability?

Chris' approach stems from a belief that no parts of an animal should go to waste. Cosentino has a strong commitment to sustainable principles and we carry that forward in all aspects of the restaurant. We utilize paper straws in our beverage program and our take away packaging is recyclable and/or biodegradable. Our mission is to utilize as much of our products as possible and minimize any potential waste. This even rings true in the design of the restaurant from the reclaimed fallen Oregon lumber used to create some of the tables to avoid harvesting live trees to the chandelier created from discarded bicycle frames.


Do We Serve Vegetarian Items?

Yes. We strive for balance in our menu offerings and although Chef Cosentino is widely known for what some may consider exotic fare, he is passionate about crafting amazing food from well sourced ingredients and we are extremely fortunate to have a bounty of local farms dedicated to providing unparalleled produce. One of our favorite vegetarian dishes on the menu right now is our hand made fettuccine with seasonal vegetable sugo!!

We are located inside the Duniway hotel in downtown Portland on the corner of 6th Ave & Taylor.

  • Valet parking is available at the Duniway’s Taylor St entrance
  • 5th & Taylor City Center Parking garage with elevator service to the Duniway lobby.
  • There are Smart Park Garages on 3rd & Alder as well as 4th and Yamhill both a short walk away.
  • We are located 1 block from all Pioneer Square MAX stops (yellow, green, orange, blue & red).

Who Are Our Local Producers?

Jackrabbit sources produce from the local farmers markets as well. One of our favorites is the PSU market on Saturdays. We also buy from local farms including Groundworks Organic,Your Kitchen Garden, Gathering Together Farms and Square Peg. We support local mushroom foragers at Cascade Organics. Our whole philosophy is to share the incredible agricultural bounty surrounding Portland with our guests.

This was further developed by keeping to our holistic approach to simplicity, authenticity, and craft.
